In many places, there is a tradition of hot noodles and noodles. Among the many cooking methods, cold noodles are loved by everyone. Today, we share with you the chicken noodles.
Ingredients: 300g fine udon noodles, cucumber half root, half carrot, garlic 1 flap, ginger 3, fungus 3~4, chicken breast 50g, bean sprouts 50g, fried peanuts 20g, chive 1 root.
Seasoning: 6 tablespoons of sesame paste, 8 tablespoons cold boiled water, 2 tablespoons of rice vinegar, 2 tablespoons soy sauce, 1 teaspoon salt, 1 teaspoon sugar, 1 tablespoon chilli oil, 1 tablespoon sesame oil, half a bowl of fermented bean curd.
Practices: 1. Pour clear water into the pot and place it in the cleaned chicken breast and ginger. After the fire is boiled, remove the floating foam and cook for 10 minutes on a low heat. Cook and remove and let cool. Soft cold blisters, wash clean, and tear into pieces of size. After the bean sprouts are washed, drain the water and reserve. Put the water in the pot, and after the fire is boiled, put the fungus and bean sprouts together and scald for 2 minutes. 3. Put sesame paste and half a bowl of fermented bean curd into a bowl and add water to mix in the same direction. 4. Add rice vinegar and soy sauce, continue stirring in the same direction, then add sesame oil and chili oil to mix. 5 Add salt, sugar and garlic toss, stir the chicken noodle with a cold noodle sauce. 6.Tear the chicken into filaments. Cucumber, carrot, shreds of edible fungus, crushed peanuts, chopped shallots. 7. Pour clear water into the pot, bake it over the fire, place it in udon noodles, cook for 3~5 minutes on medium heat, remove, cool, drain, and then dry the noodles, or fan it for a few minutes. Accelerate the volatilization of water. 8. The noodles are put into a bowl, and chopped cucumber, carrots, agaric, chicken, bean sprouts, and peanuts are added. .
After repeated trials, I found that using a fine udon noodles to make this cool noodles taste better. If you use noodles and noodles, if you use only noodles, do not cook for too long. Otherwise, the noodles will become worse. It doesn’t weigh any more. It’s better to leave the cold water and dry it before eating. The taste is best. ▲
